Prepare the Tonkatsu Sauce: In a small saucepan, combine the ketchup, Worcestershire sauce, soy sauce, and sugar. Cook over medium heat, stirring constantly, until the sugar dissolves and the sauce thickens slightly. Remove from heat and set aside. Prepare the Pork Cutlets: Season the pork cutlets with salt and pepper on both sides. Dredge each cutlet in flour, shaking off excess. Dip the floured cutlets into the beaten eggs, ensuring they are well coated. Press the cutlets into the panko breadcrumbs, making sure they are evenly coated on both sides. Fry the Tonkatsu: Heat vegetable oil in a large pan or deep fryer to 350°F (180°C). Carefully place the breaded pork cutlets into the hot oil and fry until golden brown on both sides. This usually takes about 3-4 minutes per side, depending on thickness. Once cooked, transfer the Tonkatsu to a plate lined with paper towels to absorb excess oil. Serve: Slice the Tonkatsu into strips or bite-sized pieces. Serve with steamed rice, shredded cabbage, and a side of Tonkatsu sauce. Optional Garnishes: Garnish with lemon wedges for squeezing over the Tonkatsu. You can also serve Tonkatsu with a side of Japanese-style mustard for added flavor.
